Lettuce wraps

pound boneless chicken breast, 3oz
1 cup canned water chestnuts
1 Tbsp cornstarch
1/2 cup teriyaki sauce
1/4 cup water
1 Tbsp canola oil
mix corn starch and water until smooth, add teriyaki sauce (use roasted
garlic flavor if you REALLY like garlic!) slice chicken very thin and place
in sauce, add water chestnuts (diced), marinate for about 30 minutes, then
saute in small amount of vegetable oil until no longer pink (try using PAM)
serve in lettuce leaves with shredded carrot and rice noodles (optional, add
points for the noodles)

Notes, if you want it spicier, add Szechuan stir fry sauce during
cooking, or when serving. Also you can add veggies and serve this over
rice!
