Apple Cider Applesauce
8 cups sliced peeled cooking apple (about 2 1/2 pounds)
1/2 cup apple cider or apple juice
1/4 cup "measures-like-sugar" calorie-free
sweetener
1/8 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
Combine apple and apple cider in a large saucepan. Bring to
boil, stirring frequently; cover, reduce heat, and simmer 20 minutes or until
apple is tender, stirring occasionally.
Add sweetener and nutmeg to apple mixture; stir. Cook until
sweetener dissolves, stirring constantly. Mash apple mixture slightly with a
potato masher until mixture is chunky. Cover and chill thoroughly. Sprinkle
evenly with cinnamon before serving.
