Meatless Lasagna

1 1/2 pounds of 2% cottage cheese

8 ounces of reduced fat Mozzarella

1/4 teaspoon oregano

1/8 teaspoon black pepper

1 egg

1 jar of Classico roasted garlic and fire roasted tomato

1 jar of Classico garden vegetable

3/4 cup (approximately) Parmesan Cheese

 

Mix together, cottage cheese, 2/3 of the bag of mozzarella, egg, oregano and pepper.

Spray 13 x 9 pan with cooking spray, put about 1/2 cup sauce in bottom of pan, layer 4 noodles, breaking to fit, then 1/3 of cheese mixture, sauce and parmesan cheese, repeat twice, end with 4 noodles, sauce and parmesan cheese. Bake at 350 for about 1 hour or until knife inserts easily, sprinkle remaining cheese on top during the last 20 minutes of baking.
