1 bottle Mr. Spice Salt-Free Ginger Stir Fry
(This was purchased from a low salt website called www.healthyheartmarket.com… you may not need the whole bottle. It was the first time I’d ever used it and it poured out much faster than I was expecting, so I ended up using the whole thing! You probably only need a 1/3 a bottle to do this!!!)
minced garlic (I used about a tablespoon)
1 onion, minced
1-2 tablespoons olive oil
Assorted veggies (I used potato, carrot, broccoli, cauliflower)
Water, as needed
A dash of lite soy sauce (I added at the end)
Heat up skillet. Add olive oil. Add onions and garlice and sautee for a little bit (until onion starts to brown a little). Add veggies. Saute for a minute. Add ginger stir fry and water to cover veggies.
Cover skillet and turn down heat to medium-low. Cook for awhile, checking every so often to see if more water is needed (always keep veggies covered with water) and to stir so that the bottoms don’t start to overcook (like I did).
When veggies begin to tender up, add a dash of soy sauce (to your flavor/preference…you can leave it out).
Remove from heat when veggies are tender to your liking.
Serve with noodles or brown rice.
