Chicken with Tomatillo Sauce

 

This is an approximate recipe and I also used some Ala Verde from Trader Joes.

 

 

½ onion

1 clove garlic

1 lb. tomatillos cut in quarters

1 tomato

1 can 98% FF chicken broth

lime juice

cilantro

1 cup adobo sauce

 

 

 

Cook chopped onion and garlic in olive oil until golden

Add tomatillos and cook until soft (15 minutes)

Add chicken broth, adobo sauce, tomato, lime and cilantro and simmer until thick (20 minutes)

 

Boil chicken breasts then cook on grill

Cut up chicken breast in strips and pour sauce over them

 

 

Adobo sauce below – only I just use 1 dried chipotles chilies which I get from Giant.  They are in the vegetable section.

 

 

 

 

1 large slice onion

2 cloves garlic sliced

4 Tbs catsup

5 Tbs vinegar

1 Chipolte pepper

 

Simmer for 1 hour
